Soup du Jour - Portuguese Kale Soup
Ingredients
- 2 tablespoons olive oil
- 1 lb chorizo sausage (fresh not dried)
- 8 cups chicken broth
- 1 large onion, roughly diced
- 4 large potatoes, cubed
- 1 bunch kale, stemmed washed & chopped (abt. 1 lb.)
- 1 1/2 cups ditalini
- 1 (15 ounce) can dark red kidney beans
- 4 garlic cloves - chopped
- White wine of your choice
- fresh ground black pepper
- Crushed Red Pepper
- Bay Leaf
- salt (optional)
Directions

Remove casing from sausage and cut into smaller than bit sized pieces.2
Heat oil in a heavy soup pot; saute the sausage, onion, and garlic just until the fat is rendered, about 3 to 5 minutes.3
Drain sausage on paper towel (optional).4
Add potatoes, spices, and broth to the sausage mixture.5
Bring to boil and simmer 10 minutes.6
Add kale, beans, wine, and pasta and simmer another 10 minutes until both are tender.7
Taste for seasoning- depending on how spicy your sausage is, add salt and pepper to taste.8
Serve piping hot.
I made this soup last night and it was DELICIOUS!!! Aside from the chorizo, it's a really healthy and hearty soup and great for leftovers - I definitely recommend it!
